gourmet ice cream at a fraction of cost
hey you know how we all like fancy ice cream well here is a trick I have been doing for years .I buy a gallon of cheap vanilla ice cream and add my own stuff to it. For instance for strawberry cheesecake ice cream .in large mixing bowl I dump in vanilla ice cream .add 2 small boxes of jello instant cheesecake pudding mix and a 8 oz pack of softened cream cheese. a little lemon zest if you want .mix up and pour back into container and right before it goes back into freezer to refreeze i take a small jar of cheap strawberry preserves and swirl through it and pop in freezer.
For banana pudding ice cream. I add 2 small boxes of instant banana pudding to vanilla ice cream. some mashed bananas mix up .pour back into container then add a cup of crushed vanilla wafers and refreeze .
you can make any flavor you want .caramel apple pie by just adding a can of mashed up apple pie filling and swirl in caramel topping before refreezing. Let your imagination run wild ..
pumpkin pie ice cream is so easy .just add 1 can ready to use pumpkin pie filling and 1 box vanilla instant pudding mix to gallon of ice cream. I always put in extra cinnamon .but i use cinnamon oil .a little bit of it goes along way though. I use a 1/4 tsp.to gallon of ice cream .

mini onion quiches cheap and east to fix
3/4 C.crushed crackers
4 tbsp. margarine,melted
1C chopped onion
parsley flakes
2 eggs beaten
1 C milk
1/2 tsp.salt
1/4 tsp.pepper
1 C grated cheese
combine cracker crumbs,melted margarine. press into greased mini muffin tins (or you can use a small baking dish) saute onion in 2 tbsp. margarine, and divide on top of each crumb crust. Beat eggs and milk add salt , pepper and cheese, divide into each muffin tin .. do not over fill. Bake for 15 to 20 minutes or until set. These can be frozen and reheated for later.

At this time of year, when the fruits and veggies are so abundant, I like to load up on sweet onions, peppers, and such...
If I'm making a recipe that calls for 1/2 an onion, I usually will process a couple onions, and then put the rest in 1/2 C servings into zipper bags, label and freeze for later use... Same goes for red, green and yellow peppers... Just dice them, put them in a zipper bag, and pop them in the freezer...
Its great when you're making that quick batch of chilli, stew, whatever, a real time and money saver.
Also, I know my neighbor is bringing me bags of fresh tomatoes, almost every other day... I just rinse them off... pop them in the freezer, leaving them whole, and when they get solid, I put them in a zipper bag, and put them in for later use. When I need some fresh chopped tomatoes, I just pull a couple out of the freezer, run them under warm water, the skin peels right off, I do a quick dice, and I'm good to go... and they taste as fresh as the day they were picked..!

Bubble Pizza 2 tubes biscuits 1 lb hamburger, browned 2 cup shredded cheese, can use 1c moz and 1c cheddar 1 jar pizza sauce Preferred pizza toppings
cut biscuits into quarters and place in a 9x13 baking pan, stir in all other ingredients and bake according to biscuit tube directions

Mom's American Goulash 1 lb. Hamburger 2 small cans tomato sauce 1 can diced tomatoes with juice 1 lb. Large elbow macaroni 2 tbsp. Butter Salt and Pepper to taste
Brown hamburger until no longer pink, drain any grease. Prepare macaroni according to package directions. Combine hamburger and macaroni in a large bowl or pot, add sauce, tomatoes with juice and butter. Allow to sit 15 minutes on warm so that macaroni absorbs some of the sauce. Add salt and pepper to taste.

Cheeseburger Macaroni 1lb. Hamburger 1 box macaroni and cheese ¼ cup milk 2 tbsp. Butter 1½ cups shredded cheese (your choice) (Optional) Mushrooms, onion, green peppers, chopped
Prepare macaroni and cheese according to box directions. Brown hamburger in a separate skillet, drain grease. Combine macaroni mixture and hamburger, add milk and butter, macaroni cheese packet and shredded cheese. Mix well to combine.

Mom's Cabbage Rolls 2 lbs. Hamburger 1 onion, chopped 1 1/2 cups rice 2 eggs 2 cups shredded/chopped cabbage 12-20 large cabbage leaves 1 large can tomato juice
Combine hamburger, onion, rice, chopped cabbage and eggs in a large bowl. Blanch the cabbage leaves until soft. Place about ½ cup of hamburger mixture in each leave, roll up and secure with toothpicks. Pour tomato juice over all and bake at 350 for 1 ½ hours.

Mom's Potato Soup 8-10 large potatoes, peeled and diced 1 large onion, diced 4 stalks celery sliced Water 6 cups milk Salt and pepper to taste
In large pot, combine potatoes, onion and celery. Cover with water and simmer 1 hour or until veggies are tender. Add milk and heat through (do not boil!). Salt and pepper to taste.

TUNA NOODLE CASSEROLE 1 1lb. bag egg noodles 2 tbsp. butter 2 cans water packed tuna, do not drain 1 can cream of mushroom or cream of celery soup 1/2 cup sour cream
Boil noodles according to directions, drain. Add butter, tuna, soup and sour cream, mix well. Store leftovers in freezer.

Salmon Patties 1 can salmon, bones removed 1 egg, beaten 1/4 onion, minced 1/2 sleeve saltines, crushed fine 1/2 tsp seasoning salt, garlic salt or cajun seasoning
In bowl, combine all ingredients, mixing well. Form into patties and fry in oiled skillet.

even in good times my people love this simple recipe and if you shop at an aldies or some place cheap its under $3.00 for a whole pan Chili Cheese Dog Cassarole 8 hot dog buns 8 hot dogs 1 (15 ounce) can chili 1/2 cup chopped onion 1 tablespoon prepared mustard 2 cups shredded Cheddar cheese Preheat oven to 350F. Lightly grease a 9x13 inch baking dish. Tear up the hot dog buns and arrange the pieces in the bottom of the dish evenly. Slice the hot dogs into bite size pieces and layer the pieces over the buns. Pour the chili over the hot dogs, sprinkle with the chopped onion, then spread some mustard over the chili and the onion. Top off with the cheese. Bake in preheated oven for 30 minutes. add cheese for last like 5 min

Sausage Goulash Ingredients
* 1/2 lb sausage, loose (or take off casing and break up) * 2 cups broad noodles * 3-4 cups coarsely slivered cabbage * salt and pepper
Directions Cook noodles and drain. Brown sausage in frying pan, breaking up into small pieces. Add cabbage, stir and cook until cabbage is tender. Add to noodles and season with salt and pepper to taste. Toss lightly and serve. Surprisingly tasty!

Impossible Vegetable Pie Ingredients
* 2 cups chopped broccoli * 1/2 cup chopped onion * 1/2 cup chopped green or red pepper * 1 cup shredded cheddar cheese * 1 1/2 cups milk * 3/4 cup Bisquick * 3 eggs * 1 tsp salt * 1/4 tsp pepper
Directions Heat oven to 400 degrees F. Lightly grease a pie plate. Cook broccoli, drain. Mix broccoli, onion, pepper and cheese in pie plate. Beat remaining ingredients until smooth with a whisk or in blender. Pour over ingredients in pie pan. Bake until golden brown and done in the center about 35 to 40 minutes. Let stand 5 minutes before eating. I make 2 of these at a time, because they are great reheated for breakfast, lunch or anytime. Use whatever veggies or cheese you have on hand!

Company Pasta Kids love this! Ingredients
* 1 1/2 cups medium pasta shells (or any macaroni), cooked and drained * 1 box frozen green beans * 6 slices bacon, cooked and crumbled * 1/2 cups cooked carrot slices * 1/2 lb (the smallest size box) Velveeta, cubed * 1/4 cup milk
Directions Combine pasta with veggies and bacon. Mix lightly and keep warm. Heat Velveeta with milk over low heat. Stir until smooth. Place pasta mixture on a platter or bowl. Top with sauce. A delicious and economical dish.

The Best "Beefaroni" Ever This makes a nice big pot, great leftovers. Ingredients * 2 lb. ground beef * 2 large onions chopped * 3 cloves garlic chopped * 3 cups water * 2 (15 oz) tomato sauce (or 1 15 oz tomato sauce and 15 oz V-8 for extra veggies for extra nutrition * 2 (14 oz) diced tomatoes * 3 Tbsp soy sauce * 1 Tbsp. Italian Seasoning * 3 Bay leaves * 1 Tbsp. seasoned salt * 1/4 tsp. each, pepper and garlic powder Directions Cook the ground beef, onions and garlic in a big pot on the stove. Add the rest of the ingredients. Stir well then simmer on low for 20 minutes. Add 2 cups UNCOOKED macaroni, stir. Simmer 25 minutes. Turn off heat and let sit 30 minutes. Remove bay leaves, scoop into a bowl and enjoy. I drizzle any rolls, or bread I have on hand (even hot dog or hamburger rolls) with olive oil. sprinkle a little Parmesan and garlic on and broil and I am good to go.

ASIAN BEEF & NOODLES (GOOD!!)
- 1 1/4 lb. ground beef - 2 pkgs. oriental flavor ramen noodles - 1/4 tsp. ground ginger - 2 cups frozen California blend mix veggies - 2 Tbsp. green onions (thinly sliced)
In a large skillet, brown ground beef over med. heat 10-12 mins. til done, breaking up into 3/4" pieces. Remove with slotted spoon, pour off drippings. Season beef with 1 seasoning packet from noodles, set aside. In same skillet, mix 2 C. water, veggies, noodles (broken up), ginger & remaining seasoning packet. Bring to a boil; reduce heat. Cover & simmer 3 mins. or till noodles are tender, stirring often. Return beef to skillet.

Hamburger Casserole
Brown some ground beef (about a pound), cook a small package of elbow macaroni (drain), add 6 ounces of sour cream, a can of corn, some minced onion, salt and pepper to taste, a can of mushroom soup and a can of cream of chicken soup. Mix together, put in a casserole dish and bake at 350 for 45 minutes. It's like Stroganoff, but better (and cheaper). It also makes a TON, so you can eat one now, and freeze one for later.

Picante Meatloaves:
Meatloaves 1 1/2 lb ground beef 1 egg 1/3 c. bread crumbs
Picante Topping: 3/4 c. brown sugar 3/4 c. ketchup 1 1/2 tsp. dry mustard 1 tsp. Worcestershire sauce
Mix meat with egg and bread crumbs. Make into tiny meatloaves (enough to fit balled in your palm). Bake 30 minutes @ 350 degrees, turning halfway and draining any fat. Meanwhile, heat topping ingredients in saucepan until hot.
Top meatloaves with sauce or leave for everyone to do their own. I always make this with boiled red potatoes (skin on) cut into quarters. Add butter and parsley flakes to taste. Also, if you need a veggie, green beans work well with this. All are very easy to make and no Expensive items, other than maybe the dry mustard. ENJOY!

This is a one-pot meal that you can throw in the oven and then go read a magazine or something.
In a large Dutch Oven layer the following: 3 large carrots, peeled and sliced in 1/4 inch slices; 2 cups of peeled, sliced potatoes; 2 cups of frozen peas if you have them, or any green vegetable works; 1-2 pounds of ground beef. Top with a can of cream of mushroom soup that has been thinned with 1/4 cup milk. Cover and bake at 350 degrees F until done, usually about 90 minutes.
Variation: Any cream soup will work. Or mix an envelope of onion soup with 2 cups water in place of the soup. You can also substitute other vegetables.
