The idea behind "sauce" is that no matter what the sex of the bird, the same sauce complements it.
This is a favorite of Garrison Keillor:

Thanks for explaining that. I never would have thought of that as I would use the same sauce for either sex, but what do I know Proud as a peacock (sorry for the simile, but I like that one! ;D)
