I got this recipe from our local paper years ago. Feel free to adjust it to your taste. I use the oil to make any seasonings stick but I think anything else can be adjusted/changed.
Roasted Pumpkin seeds 1 cup pumpkin seeds (or squash seeds etc) 1/2 tsp cooking oil 1/2 tsp Worcestershire sauce (If leaving this out, increase the oil to 1 tsp or use other flavoured liquid to replace) dash of onion salt
Wash seeds; remove pulp. Allow to dry at room temperature overnight. Combine oil, Worcestershire sauce and onion salt; mix with the seeds. Spread on a baking sheet. Bake at 200F until seeds are golden brown and crunchy. (About 1 1/2 hours), stirring occasionally. Makes 1 cup of seeds.
