Pumpkin Chip Muffins
4 eggs 2 c sugar 2 C solid pack pumpkin *I use fresh pumpkin* ½ c vegetable oil ½ c applesauce 3 c all-purpose flour 2 tsp baking soda 2 tsp baking powder 2 tsp gr cinnamon 2 tsp nutmeg 1 tsp salt 1 C mini chocolate chips
In a large mixing bowl, beat eggs, sugar, pumpkin & oil until smooth. Combine flour, baking soda, baking powder, cinnamon & salt; add to pumpkin mixture & mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full. Bake @ 400º for 16-20 min or until muffins test done. Cool in pan 10 min before removing to a wire rack.
Yield:about 24 standard-size muffins
My kids love pumpkin chocolate chip muffins, and they're good for you too...
