I was impressed with this.. wonder if MamaD thinks it would be as good as a real Hawaiian Luau? Kalua Pig in a Slow Cooker Recipe This is a simple way of making traditional Hawaiian kalua pig without having to dig a hole in your back yard. 1 day | 10 min prep | SERVES 12 1 (6 lb) pork butt 1 1/2 tablespoons hawaiian sea salt 1 tablespoon liquid smoke flavoring Pierce pork all over with a carving fork. Rub salt then liquid smoke over meat. Place roast in a slow cooker. Cover, and cook on Low for 16 to 20 hours, turning once during cooking time. Remove meat from slow cooker, and shred, adding drippings as needed to moisten.

This is how I make it - - especially when the only hole in the yard is a septic system!!!!! The Hawaiian salt is important - - if you can find the red kind (that has minerals from the mud when the crystals are forming), use that - - if you can not find Hawaiian salt, you can substitute kosher salt - - do not use table grade salt - - it is too fine of a grind and the meat will get too salty....
My DD1 and I make this all the time, but we cut down the liquid smoke to two tsps...... If you are serving this to family, or if you want to stretch it out some, you can add regular cabbage cut into 1" slices and then cubed - - add to the shredded meat and put a lid on the pan and steam the mixture until the cabbage is just past the too crisp stage.... The cabbage cuts down on the smoke and salt flavors a bit, and we find when we are feeding haole (non-local) friends, they like it better.....

Hey, you're still up???
I am bored and tired, but I wanted to add some stuff.
I was given Hawaiian Red Salt from a swap a few months back.. also, other salts.. this was so good!
