This soup is perfect for hot summer days, served with a salad. Double up and keep it in the fridge. It is easy to make, and all you need is a blender, or a hand blender and a bowl. A couple of spins, and the soup is done!
You need ( apart from the blender...):
1 English cucumber, peeled and sliced 1 can 19 fl oz Tomato Juice 3 cups Chicken broth 3 large tomatoes, peeled*) and sliced 1/2 Red pepper, cut up 1/2 yellow pepper, cut up 1/2 green pepper, cut up 3 tbsp olive oil 1 onion, peeled and cut up 3-4 cloves of garlic, crushed salt and pepper to taste, and maybe some chopped parsley. crutons to put on top of the soup.
Mix everything, but salt, pepper, parsley and crutons, in a blender. Spin until finely chopped and blended. Taste off with salt and pepper. Put in the fridge for at least a couple of hours before serving. You can serve in either bowls - as a soup - and sprinkle parsley and croutons on top, or... In tall glasses with an ice cube or two added.

*) I peel my tomatoes with the help of boiling water. Stick a fork in the tomato, and cut a cross with a knife. Dip the tomato in boiling water for 30 seconds. The skin will losen, and it is as easy as pie to peel them.

Sounds good. Do you think I could use my reduced sodium V-8 juice in place of the tomato juice? It'd give me even more vitamins ;D and I am really trying to watch my sodium intake ....High bp and all...
