From The Blueberry Muffin Murder
Blue Blueberry Muffins
Preheat oven to 375°F, Rack in the middle position
3/4 cup melted butter (1 1/2 sticks) 1 cup sugar 2 beaten eggs (just whip them with a fork) 2 teaspoons baking powder 1/2 teaspoon salt 1 cup fresh or frozen blueberries (no need to thaw if they're frozen) 1/2 cup blueberry pie filling 2 cups plus one teaspoon flour (no need to sift) 1/2cup milk
Crumb Topping: 1/2 cup sugar 1/3 cup flour 1/4 cup softened butter (1/2 stick)
Grease the bottoms only of a 12-cup muffin pan (or line the cups with cupcake papers). Melt the butter. Mix in the sugar. Then add the beaten eggs, baking powder, and salt, and mix thoroughly.
Put one tablespoon of the flour in a plastic bag with your cup of frozen or fresh blueberries. Shake it gently to coat the blueberries, and leave them in the bag for now.
Add half the remaining two cups flour to your bowl and mix it in with half the milk. Then add the rest of the flour and milk and mix thoroughly.
Here come the fun part: Add 1/2 cup blueberry pie filling to your bowl and mix it in. (Your dough will turn a shade of blue, but don't let that stop you-once the muffins are baked, they'll look just fine.) When your dough is thoroughly mixed, fold in the flour-coated fresh or frozen blueberries.
Fill the muffin tins three-quarters full and set them aside. If you have dough left over, grease the bottom of a small tea-bread loaf pan and fill it with your remaining dough.
Step # 2: The Crumb Topping:
Mix the sugar and the flour in a small bowl. Add the softened butter and cut it in until it's crumbly. (You can also do this in a food processor with hard butter using the steel blade.)
Sprinkle the crumb topping over your muffins and bake them in a 375° oven for 25 to 30 minutes. (The tea-bread should bake about 10 minutes longer than the muffins.)
While your muffins are baking, divide the rest of your blueberry pie filling into 1/2-cup portions and pop it in the freezer. I use paper cups to hold it and freeze them inside a freezer bag. All you have to do is thaw a cup the next time you want to make a batch of Blue Blueberry Muffins.
When your muffins are baked, set the muffin pan on a wire rack to cool for at least 30 minutes. (The muffins need to cool in the pan for easy removal.) Then just tip out of the cups and enjoy.
These are wonderful when they're slightly warm, but the blueberry flavor will intensify if you store them in a covered container overnight.

Pineapple Right-side-up cookie bars
Preheat oven to 350 degrees F., with rack in middle position.
(Another recipe with a no-roll crust--don't you just love it?)
2 cups flour (no need to sift) 1 cup softened butter (2 sticks, 1/2 pound) 1/2 cup white sugar 4 beaten eggs (just whip them up with a fork) 1/2 cup white sugar 1/2 cup frozen concentrated pineapple juice 1/2 cup drained crushed pineapple (if you have any left over, freeze it) 1/2 teaspoon salt 1 teaspoon baking powder 4 tablespoons flour (that's 1/4 cup--don't bother to sift)
FIRST STEP: Dump pineapple in a strainer and let it drain while you do this step. Cream butter with sugar and add flour. Mix well. (You can also do this in a food processor with hard butter cut into chunks and the steel blade.) Spread mixture out in a greased 9 x 13 inch pan (that's a standard sheet cake pan), and press it down evenly with your hands.
Bake at 350 degrees F. for 15 to 20 minutes. Remove from oven. (Don't turn off oven!)
SECOND STEP: Mix eggs with sugar. Add pineapple concentrate, drained pineapple, and mix. Add salt and baking powder and stir it all up. Then add flour and mix thoroughly. (This will be runny--it'll set in the oven.)
Pour this mixture on top of the pan you just baked and stick it back into the oven. Bake at 350 degrees E for another 45-50 minutes. Then remove from oven.
Let cool thoroughly, then sprinkle a little powdered sugar on the top and cut into brownie-sized bars.
(Herb Beeseman loves these--it was the least I could do for him. Mother and Carrie love them too, but they like a double serving with a scoop of vanilla ice cream on top. Marge Beeseman has refused to taste them, probably because she thinks she makes the best Pine- apple Upside-Down Cake in the state of Minnesota and she doesn't relish any interference.)

FOURTH OF JULY JELL-O CAKE Preheat oven to whatever it recommends on the cake mix box.
Hannah’s 1st Note: This recipe is from Andrea, who makes it for the Lake Eden Independence Day picnic every year. Kids love it because it’s colorful. Adults love it because it’s tasty. Andrea loves it because it’s easy and she’s the undisputed Jell-O Queen of Lake Eden.
1 package white cake mix (1 pound 2.25 ounces) The ingredients called for on the cake mix box
1 three-ounce package dry red Jell-O (raspberry, cherry, whatever) 1 three-ounce package dry blue Jell-O 1 small tub of Cool Whip, or one can of whipped cream
Preheat the oven to the temperature it recommends on the cake mix box.
Grease and flour a 9-inch by 13-inch rectangular cake pan.
Mix up the cake using the directions on the box. Bake the cake for the required amount of time. Let the cake cool to room temperature.
When the cake has cooled, dump one package of red Jell-O into a small bowl. Add one cup boiling water to the Jell-O and stir until it’s dissolved (about one minute.)
Poke holes in the top of the cake with a fork, punching it all the way to the bottom of the cake pan. Make about 30 punches.
Pour the Jell-O evenly over the top of the cake. Give it a minute or two to sink down into the holes you punched.
Refrigerate the cake for an hour.
Prepare the second package of Jell-O, the blue one, mixing the contents with 1 cup boiling water and stirring for one minute, or until it’s dissolved.
Punch more holes in the top of your cake, crisscrossing the first holes. Pour the second bowl of Jell-O liquid over the top of the cake. Give it a minute or two to sink down and then cover it with plastic wrap or foil. Refrigerate the cake for at least 4 hours. Overnight is fine, too.
Andrea says to warn you that the top is going to look ugly and that’s why you’ll frost it with Cool Whip or whipped cream.
When it’s time to serve, "frost" your cake with Cool Whip or whipped cream and cut into square pieces.
To Make A Layer Cake:
For a truly gorgeous cake, divide the batter into two 8-inch round pans and bake it according to the package directions. Then divide the Jell-O between the two pans.
To frost, remove the cakes from the pans, use Cool Whip or whipped cream between the layers and to frost the sides and top. Everyone will ooh and ahh when you slice the cake.
Hannah’s 2nd Note: Andrea made a confession to me the night of the Christmas potluck dinner. She said she doesn’t bake the cake. She buys an unfrosted sheet cake at the Red Owl, does the part with the Jell-O, and frosts it with Cool Whip. I thought about this for a few minutes and decided it’s probably a good thing.
A Word of Warning about COCOA
When cocoa is used in any of my recipes, make sure to use plain old American cocoa (I usually use Hershey’s unsweetened cocoa.) There are many designer cocoas on the market. They’re wonderful in their own right, but they won’t work in my recipes. Make sure you don’t buy cocoa mix, which has powdered milk and a sweetener added. Stay away from Dutch process cocoa – it has alkaline added. Also beware of cocoas that are mixed with ground chocolate or other flavorings. They won’t work either. Things were simpler in my grandmother’s day (and she’s the one who gave me the Cocoa Snaps recipe.) If you’re in doubt, check the ingredients that are listed on the container of cocoa. It should say "cocoa" and nothing else.

Lori, thank you! I love blueberry muffins esp!!! The others sound great too.I don't however like the fake style cherry or blueberry fillings you buy at least here they are lousy. You're a baker, do you think I could substitute more frozen blueberries in place of this?

Yes you can sub "fresh" frozen blueberries, as long as they haven't been mashed, sweetened etc. Just make sure they don't have any ice on them, but don't thaw them, or they'll mush up... put them in with the dry ingredients, so they're lightly dusted with flour, that'll help them not to sink to the bottom of the muffins.

The blueberry pie filling is what makes these "Blue Blueberry muffins... so if you want to add a bit of say, applesauce to them, or a mashed banana, you could do that too... it won't make them as blue, but it'll kinda make up for that ingredient and the moistness factor...
