Cinnamon Streusel Apple Cider Muffins

The streusel topping is what turns this from a good apple muffin recipe to a great apple muffin. The muffin itself is moist with a very mild flavor from the apples. But that streusel... oh my. Full of cinnamon, it bakes to a nice sugary crunch and really complements the apple flavors in the muffin. Just delicious!
Ingredients
1 3/4 c all-purpose flour
1/3 c sugar
2 tsp baking powder
1/4 tsp salt
1 large egg
1 small apple, diced
3/4 c apple cider or apple juice
1/4 c cooking oil
STREUSEL:
1/3 c packed brown sugar
3 Tbsp flour
2 tsp cinnamon
3 Tbsp cold butter
1How to Make it: Preheat your oven to 350°
FOR STREUSEL: Stir brown sugar, flour, and cinnamon in small bowl. Cut in butter with a pastry blender. Set aside.
2FOR MUFFINS: Lightly oil twelve 2 1/2-inch muffin cups or line with paper baking cups; or 6 Jumbo Muffin Cups set aside.
3In a medium mixing bowl stir together flour, granulated sugar, baking powder, and salt. Make a well in the center.
4In a small mixing bowl combine egg, apple,apple cider, and oil.
5Add all at once to flour mixture.
6Stir just till moistened. (The batter should be lumpy.)
7Spoon about 1 tablespoon of the batter into each prepared muffin cup.
8Sprinkle 1 teaspoon of the brown sugar mixture over each.
9Fill with remaining batter. Sprinkle tops of muffins with remaining streusel.
10Bake in a preheated 350° F oven until golden brown, about 20-25 minutes.
11Remove muffins from pans; cool slightly on racks.
