I have been intrigued lately with homemade mixes. I like the convenience of mixes but like to control the ingredients myself and reduce preservatives and flavour enhancers. I like the lower cost too.
The first mix I made was adapted from a recipe in "Clueless in the Kitchen"
Hot Fudge Sauce-N-Cake Packet A: (cake portion) 1 cup flour 3/4 cup sugar 2 tsp baking powder 1/4 cup cocoa Mix all ingredients together and place in a jar or ziplock bag
Packet B: (Sauce portion) 3/4 cup sugar 1/4 cup cocoa
Additional ingredients: 1/2 cup vegetable oil 1/2 cup milk 1 tsp vanilla 1/2 cup chopped walnuts or pecans (optional: I don't add them) 1 3/4 cup hot water
To Make Sauce-N-Cake Preheat oven to 350F. Dump cake packet into a 9 inch square baking pan. In a small bowl, mix together the oil, milk and vanilla. Add to dry ingredients and stir with a fork until combined. Mix in nuts if using. Spread evenly in pan. Sprinkle contents of sauce Packet B evenly over batter in pan. DO NOT STIR it together. Pour hot water evenly over batter and sauce mix. DO NOT STIR. Bake at 350F for 40 - 45 minutes or until top is crusty and sauce is bubbly. The sauce falls to the bottom of the pan and the cake rises to the top.

Homemade Brownie Mix (from iambaker.net) Dry ingredients: 1 cup white sugar 1/3 cup cocoa 1/2 cup flour 1/4 tsp salt 1/4 tsp baking powder
Wet Ingredients: 1/2 cup butter or margarine, melted and cooled 2 eggs 1 tsp vanilla
Sift together dry ingredients and place in a jar or ziplock bag.
To make brownies: Melt butter and set aside to cool slightly. Beat eggs together with vanilla and stir gently into dry ingredients. Pour the melted butter into batter and mix just until incorporated. Spread into prepared 8 inch square pan and bake at 350F for 20 - 22 minutes.

Your first one is close to what I posted...I don't make as often since this g-son is married but will make it ever once in a while for him and wife...
