These turned out very good too. I cut the recipe in half because I didn't want to make that much mix. This makes 4 mixes. I then used 1/2 of 1 mix (1.5 cups) to make 6 muffins.
5 cups whole wheat flour (I used 2 1/2 cups)
2 cups oat bran or Quick Oats (I used 1 cup)
5 cups all purpose flour (I used 2 1/2 cups)
3 tsp cinnamon (I used 2 tsp just because I like cinnamon but 1 1/2 tsp would be fine)
1 tsp nutmeg (I used 1/2 tsp)
6 tsp baking powder (I used 3 tsp)
2 tsp baking soda (I used 1 tsp)
Blend together and divide evenly into 4 packages. (I had 2 packages of 3 cups of mix)
To make muffins
1/2 cup oil (I used 1/4 cup)
1/2 to 1 cup sweetener (honey, maple sugar etc) (I used 1/4 cup sugar)
1 cup fruit or vegetable puree (pineapple, apple, carrot, zucchini, sweet potato, banana, berries or apple sauce)
(I was going to use banana but couldn't find any in my freezer so I used 1/2 cup thawed zucchini. Because I used zucchini, I added about 1/4 cup cocoa to the dry ingredients)
1/2 to 1 cup milk (I used 1/4 cup because the zucchini was so wet)
1 to 2 eggs (I used 1)
1/2 to 1 cup nuts, raisins, seeds or other dried fruit (I used 1/4 cup dried currants - I didn't have any raisins)
Combine all ingredients. Do not overmix. Batter should be lumpy. Spoon batter evenly into greased or paper lined muffin tins. Bake at 350F for 20 to 25 minutes.
I made 6 muffins & they turned out very good. I think I will like this recipe because it is so adaptable and I can control the amount of sugar etc that I use.
Eric, I think if you made half of the basic mix and divided into 4 baggies with 1 1/2 cups of mix in each, it would work out well for you. You can always freeze the extras if you don't think you will eat them fast enough. I think these would be very good made with bananas, raisins and nuts.
