Mock Apple Pie (Zucchini)
2 "deep dish" 9 inch pie crusts (available as one package in the frozen food section)
Or if you have the time you can make your own.
2 tablespoons of lemon juice 5 large zucchini, peeled, cut lengthwise with seeds removed, and sliced into 1/4 inch pieces (6 cups) 1 1/2 cups sugar 2 teaspoons cinnamon 1/4 teaspoon salt 1/4 teaspoon nutmeg 3 tablespoons flour 4 tablespoons butter
Directions: Pre-heat oven to 450. Allow pie crusts to thaw. Sprinkle lemon juice over zucchini. Blend together sugar, salt, flour, vanilla, cinnamon and nutmeg and add to sliced zucchini. Toss until they are evenly coated. Spread the coated zucchini into the pie pan. Layer to include everything and pour any leftover juices over the top layer. Dot with butter. Cover with second pie crust. Cut two or three vents on top to allow steam to escape. Bake in oven for to minutes, then reduce heat to 350 and bake for 40 minutes or until a fork inserted in the center comes out nearly clean.
Allow to cool 1 hour before serving.
