I have avoided Pork Loin roasts forever. I can never get them moist, but always dry as an overcooked turkey. Today, I decided to give it another try, and this time, in the crockpot. My crock pot...Where have you been all my life? 1 pork loin roast ( this one was about 4 lbs) 1 envelope onion soup mix 1 1/2 cup water 1 bayleaf 1 clove garlic, quartered (optional) ground ginger salt white pepper Turn the oven on 480F Make slits in the roast, and press in the garlic, Put the onion soup mix, and the water, in an ovenproof dish, big enough to hold the roast. Put the roast in the liquid, sprinkle ginger, salt and white pepper on top. Put the roast in the oven for 30 minutes to get color, and to lock in the juices. Transfer over the liquid and roast to your crockpot. Add the bayleaf. Put the crockpot on high for 4 hours. The roast comes out so tender, you'd never think it was pork loin! Ah! I think I want another helping!

I may try this without the garlic, bayleaf and ginger..I like cooking in the crockpot..
