Posted by: Snowteapots_IA; 10/5/04 I have a method that works so well to cook eggs for sandwiches. Put eggs in pan and cover with water -bring to a boil - shut off heat - put lid on and let set 20 minutes.
Egg Salad Sandwiches Boil until thick 1 Tb. butter 1 Tb. flour 2 Tb. sugar (I used 1tblsp) 1/2 tsp. salt 1 Tb. vinegar 1 beaten egg 1/2 c. 1/2 & 1/2 or cream
Then add: 8 oz. cream cheese 1 Tb. chopped onion (I added celery too) 8 - 10 grated hard boiled eggs
These are really good and makes a lot of sandwiches. I've had a lot of request for this recipe if I take them somewhere.

I tried this over the week end and was dissapointed, kinda blah. I guess it's because we like a lot of Zip in our deviled eggs and egg salad.
I added relish, mustard, more cider vinegar and even threw in some sunflower seed nuts. It was great then. Oh an more onions.
