PATRIOTIC POTATO SALAD
INGREDIENTS: 1 pound blue potatoes 1/2 pound Yukon gold or creamer potatoes 1/2 pound red potatoes 1 tablespoon salt 1/4 tablespoon white wine vinegar 2 tablespoons grated onion 1 teaspoon Dijon mustard 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper 2/3 cup extra virgin olive oil 2 tablespoons finely chopped oregano 1 tablespoon capers
DIRECTIONS: Place potatoes in large saucepan; add water to cover. Stir in 1-tablespoon salt. Bring to a boil over high heat; educe heat to medium. Cook 20 minutes or until tender. Drain; let cool. Cut into quarters. Place in large bowl. In small bowl, combine vinegar, onion, mustard, one-half teaspoon salt and pepper; pour over potatoes; toss. Add olive oil, oregano and capers; gently toss again. Salad may be served slightly warm. Salad can be prepared up to 24 hours ahead. Cover and refrigerate. Bring to room temperature before serving.
Yield: 8 servings

I'm not surprised it's a new one to you Hazel!!!! Seriously tho, we don't see them here that often either, it's a patriotic salad so I guess the blue are for that. Lori, do you think making this all with red or 'white' potatoes would work for this? I just love potato salad without any mayo in it. Slush, a good southern redneck has to have their mayo.

I guess the Smurf's grow blue potatoes...Do you remember the Smurf's cartoon??? My kids use to watch them..and they grew veggies..come to think about it..I never did see blue potatoes..
Do they really grow them?? I've never seen or heard of them??? Guess I need to do a search.
I'm not making it...Since you mentioned it does not have Miracle Whip in it...It won't be good..

Yes they really do grow Blue Potatoes, they come in the small bags, like the Yukon gold variety. You can't get them all the time though, so in answer to Sluckies question... yes I think you could use regular red or even the gold potatoes instead... it just wouldn't look the same.
