NO OVEN SCALLOPED POTATOES (serves 4) Source: grandmas' cookbook (handwritten).
6-8 medium sized, potatoes 2 tbsp butter, or margarine 1 tsp salt 1-2 onions 1/4 cup 35% cream 1 cup milk parsley chives (optional)
1. Peel and dice the potatoes. 2. Peel and dice the onions 3. Put the butter or margarine in a pot and cook the two above for about 6-7 minutes, stirring every now and then. (medium/low heat) 4. Add the salt and stir well 5. Add the liquid (cream and milk). 6. Stir well 7. Bring the heat down to low, cover the pot, and let cook until the potatoes are soft. (about 15 minutes). 8. Add a tbsp of parsley, and maybe a tbsp of chives. Stir well
Goes well with smoked sausages, ham etc.
