Anyone have a good green vegetable recipe. I'm looking for something different to serve for Thanksgiving other than the old standbys.....you know the green bean one and the broccoli in cheese sauce one, they're good, but wanted to try something a little different.

Here you go Sis, its a healthy version of Broccoli casserole. I'm making it this year for our Thanksgiving dinner too
Use steamed broccoli and plain rice, just like you normally would start with. Prepare them and set aside.
Take one large onion, five cloves of garlic and two ribs of celery, this is known as the Holy Trinity in southern cooking. Mince these three things.
Add one tsp. olive oil and one tsp. butter to a large saute pan. Add onions, garlic and celery. Cook until onions are clear.
Add 1 tsp. italian seasoning, one dash of paprika.
Add fresh ground pepper, salt if you want it to taste.
Add 3 Tbsp. flour.
Cook for about 2 min. until the flour and oil/butter/moisture have combined and start to brown a little.
Add one cup chicken broth stirring with a whisk until the flour is blended in. Continue to cook stirring until thickened.
Mix cooked broccoli and rice together and place in casserole.
Pour sauce over all and mix in.
Top with 1/2 cup shredded sharp chedder - it has the most "cheesy" flavor so you can use less.
Bake for 10-15 min. at 350 or until cheese is melted.
Sprinkle top with dried parsley for extra color and garnish.
You can adjust the amounts up or down depending on how much you need to make.
There ya go. They will never miss all the cheese and butter and cream. This version is so much lower in fat and cholesterol but still has lots of flavor.

This is a recipe I translated and fiddled with. I can't remember if I put it in the cookbook or not.
I was so proud I posted it over at allrecipes.com (feel free to go read the reviews on it) only to find there were TONS of other 'Leslie's. Oh, well, you live you learn.
Broccoli Cheese Bake
8 cups fresh broccoli
1/2 cup butter
2 tablespoons all-purpose flour
1 small onion, chopped
1 1/4 cups milk
salt and pepper to taste
4 cups shredded Swiss cheese, or cheese of your choice
2 eggs, beaten
Directions
1. Preheat oven to 325 degrees F (165 degrees C).
2. Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
3. Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
4. Bake in preheated oven for 30 minutes.
Note: This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

Cheesy Creamed Spinach Casserole
2 (10 ounce) packages frozen chopped spinach, cooked
1 (1 ounce) package dry onion soup mix
1 1/2 cups sour cream
1/2 cup heavy cream
1/2 cup shredded Cheddar cheese
1. Preheat oven to 350°F/175°C. Grease a 2 quart casserole dish.
2. Drain spinach. In a medium mixing bowl combine spinach, soup mix and sour cream. Spoon into greased casserole dish and top with cheese.
3. Bake in preheated oven about 25 minutes, or until heated through.

Both of these recipes are great!
Savory Green Bean Bundles
1 pound bacon
3 (15 ounce) cans whole green beans, drained
1 (16 ounce) bottle French dressing
Directions:
Preheat oven to 375°F/190°C.
Slice bacon in half (easiest to slice whole package at once right down the middle). Bundle 6 to 7 green beans together and wrap one slice of bacon around the middle of the bundle. Secure with a toothpick. Arrange bundles in one layer in a baking dish. Pour French dressing over all of the bundles - make sure to drizzle some on each bundle.
Bake in a preheated oven for 30 minutes or until the bacon is done.

Sweet Green Bean Bundles
3 (14.5 ounce) cans whole green beans, drained
1 pound bacon, cut in half
1/2 cup butter, melted
1 cup brown sugar
1 teaspoon garlic salt
Directions:
Preheat oven to 350°F/175°C. Grease a 9x13 inch baking dish.
Wrap about 7 green beans with bacon and place in prepared dish. Repeat, using all the green beans and bacon.
Combine butter with brown sugar. Pour over green bean bundles and sprinkle with garlic salt.
Cover with foil and bake for 45 minutes.

lemon juice, fresh squeezed
lemon zest
white wine
trim asparagus. I sliver the dried ends off. then cut them in 1/2. I use the top half for this dish. I cut the bottom half in 1/2 again. top half (closest to spears), I use for stir frys. the bottom half I use in soups. marinate in lemon juice, lemon zest, and white wine for about an hour. grill under broiler for a couple minutes, turn and grill a couple more.
