I make THE worst potato pancakes in the world. I've tried every recipe known to man. I've finally reached the point where I'm sort of happy with the texture, but they have absolutely NO flavor. I use grated potato (usually russets), a little flour, an egg, salt, pepper and onion. I fry them in veg oil. Maybe I should try Crisco?
Help me. The Russian side of my family is beginning to suspect that I was left on their doorstep by WASPS.
Please, if you have any eastern European blood in your veins, tell me the secret.

I am west Europiean (Swedish) but I make a lot of Latkes.
It is my experience that you have to really squeeze out the liquid before putting them in the pan. I fry them in 1/2 oil 1/2 butter, and I add salt and pepper after I have put them in the frying pan.
Would that help do you think?

Or what about using bacon grease? I know it sounds yucky, but my DH likes his hashbrowns fried in bacon grease, so it is worth a try.

I am a nice Jewish girl who always makes terrible Latkes. This past year I gave up and bought frozen ones. I can never get all the liquid out and then the potatoes turn gray from being exposed to air. Blah, blah, blah.
I make a great Kugel, though!

Potato Pancakes
4-5 large potatoes, peeled ( I use Idaho)
1 medium onion, peeled
2 eggs
1/3 c flour
2 tsp. salt
1/8 tsp. fresh ground black pepper
Coarsely shred the potatoes and onion into a bowl ½ filled with cold water (This eliminates the blackening of the potatoes). In colander lined with clean towel or cheesecloth, drain potatoes and onion. Wrap and squeeze the mixture as much as possible. Beat eggs and add potato mixture and flour, salt and pepper.
Heat a small portion of oil in skillet. Drop potato mixture into 4 mounds, flatten slightly and fry till golden. Place on paper towel and keep warm in low oven.
Serve with apple sauce or sour cream or ketchup.
ï‚· Optional ingredients: fresh garlic, fresh dill, fresh parsley, chopped red bell pepper.
ï‚· I also use the food processor to shred the potatoes and onion and I mostly DO NOT do the colander/water thing and it turns out fine. Also, make sure you use enough salt to bring the flavor out.

What exactly IS the problem?
They come out killer every time I make them! I mean, they're JUST hash browns w/grated onion & egg anyway!
I fry med hi till the outsides look like lt brown lace then flip.
Remember to ALWAYS test oil before using - make sure its the right temp.
AND, have plenty of sour cream and applesauce to serve with! lol ((I've actually been liking them w/an egg though! BAD JEW, BAD JEW!! lol )))

I also am a nice Jewish mother. I buy Manischevitz or striets potato pancake mix, follow the directions on the box, and everyone loves them!

If it's made with bacon grease, it may be tasty but it isn't a latke!

add seasoning salt to my potatoe cakes. I don't know if this is the same thing or not, but it sure sounds like it and the flavor is wonderful.

After I've squeezed out all the moisture I can with paper towels in a colander, I take up a handful at a time and squeeze out as much moisture as I can with my hands; then I throw the squeezed-out handful in the hot oil. Naturally my latkes are pretty small.
One unconventional touch I like is to add snipped scallions to the potato mixture, either instead of or in addition to part of the grated onion.
